Why a swap, not an addition

Adding dates on top of your usual sugar intake doesn't help anyone manage weight — a date still has calories, roughly 20-25 for a smaller Zahedi and closer to 60 for a soft, moist Mazafati. The difference is what comes with those calories: fibre that slows digestion, potassium, magnesium, and a small amount of B6. Refined sugar brings none of that. Used as a direct replacement — not an extra — the swap is worth making.

Which variety works where

Soft, moist Mazafati blends smoothly into a food processor and works well pureed into a paste for baking — a natural binder and sweetener in energy bars or bread. Piarom, with its firmer, drier texture and darker flavour, holds its shape better when chopped and added whole to oats or granola. Zahedi, the driest and least sweet of the three, is closer to a neutral filler — useful when you want texture without pushing the sweetness too far.

A simple substitution guide

For most baking recipes, start by replacing about a third of the sugar called for with an equal weight of pitted, blended dates, then adjust to taste — dates vary in sweetness by variety and harvest, so there's no single fixed ratio that works every time. Soak firmer varieties like Zahedi in warm water for 10 minutes before blending if the recipe needs a smooth paste rather than chunks.

For cooking and baking, freshness matters more than grade — a date that's begun to dry out and crystallise on the surface is harder to blend smoothly.
