What Kurma Mariami AA brings to a savoury dish
Most people meet Kurma Mariami AA in a bowl, eaten plain after a meal. That is fine, but it wastes half of what the grade is good for. Mariami AA is softer and less sticky than Ajwa, with a caramel note that is closer to brown sugar than to syrup. That makes it easier to chop, blend, or stuff without the knife gumming up — which is exactly the problem with wetter grades in cooking.
Stuffed and grilled
Pit the date, push in a sliver of hard cheese or a whole almond, and grill or pan-sear it for two to three minutes until the skin blisters slightly. The sugar in the fruit caramelises against the heat, and the cheese cuts the sweetness. This is the same trick used across the Gulf for savoury date starters, and Mariami AA holds its shape better than a very soft grade like Medjool because it has less moisture to begin with.
Chopped into a tagine or stew
Dates go into North African tagines late, in the last fifteen minutes of cooking, so they soften without dissolving into the sauce. Two or three Mariami AA dates, roughly chopped, are enough for a pot serving four — any more and the dish turns sweet rather than balanced. The same applies to a lamb or chicken stew with cumin and cinnamon: the date is there to round off the spice, not to dominate it.
In a salad
Sliced thin, Mariami AA works with arugula, crumbled feta, and toasted walnuts — the bitterness of the leaf and the salt of the cheese need the date's sweetness to balance. Dress it lightly; a heavy dressing drowns out the fruit.
Salsas, chutneys, and glazes
Blitzed with tomato, onion, chili, and a splash of vinegar, chopped dates make a chutney that works on grilled meat or tacos. For a glaze, simmer chopped dates with a little vinegar and stock until they break down into a paste, then brush it onto meat for the last few minutes of roasting so it caramelises rather than burns.
Rice and stuffing
A handful of chopped Mariami AA in a pilaf, alongside almonds or pistachios, is a common addition in Iranian and Levantine rice dishes — added at the same time as the nuts, off the heat, so the dates keep some texture instead of turning to mush.
Buy quality Mariami AA in a size that suits how you cook — see current date pricing for a sense of what different grades cost, and if you also want the deeper, stickier grade for baking rather than cooking, our Ajwa page covers that. For more on date cravings during Ramadan, we've written separately about why the fruit is eaten the way it is at iftar.
