Malaysian home cooks tend to think of dates as a Ramadan snack first and a cooking ingredient second, but Persian and Middle Eastern kitchens have used them as a savoury building block for generations. Harga kurma shouldn't stop that experimentation — the varieties that work best in savoury cooking (Piarom, Mazafati, Rabbi) are often priced closer to the everyday range than Medjool, which is better kept for eating whole.
Rice, stews and the dish that started it all
Persian rice dishes like morasa polo fold dates in with barberries, orange peel and saffron rice — the date's sweetness balances the tartness of the barberries rather than dominating the dish. In a khoresh (stew), a handful of chopped dates added in the last 20 minutes of cooking does something sugar can't: it breaks down slightly, thickening the sauce while sweetening it. Lamb and chicken stews both take well to this; beef needs a longer stew time so the dates should go in later to avoid turning to mush.
Building a filling that isn't just "sweet"
A savoury date filling works when it's balanced against something sharp or salty — feta, walnuts, a squeeze of lime. Halve and pit the dates, stuff with a small cube of feta and half a walnut, and grill briefly until the cheese softens; that three-ingredient combination covers most of what makes dates work in savoury food generally. Beyond the sweet-treat use of Mariami specifically, its firmer flesh holds shape well through grilling, unlike softer varieties that collapse before the cheese melts.
Sauces built around dates instead of sugar
Blend soaked dates with tamarind, garlic and a little vinegar for a base that works like a tangy-sweet barbecue sauce without refined sugar. It needs less added salt than a bought sauce because the dates carry enough natural sweetness to round out the acidity on their own.
Which variety for which dish
Firmer varieties (Piarom, Deglet Noor) hold their shape when chopped into rice or stirred into a stew near the end. Softer varieties (Mazafati, Medjool) work better blended into sauces or fillings where texture doesn't matter once they're broken down. Buying based on the grading system rather than the sticker price alone avoids paying a premium for a soft, presentation-grade date that's about to get blended anyway.
Starting point
A stuffed date with feta and walnut is the easiest entry into savoury cooking with dates — no stew, no simmering, ready in ten minutes. From there, adding chopped dates to a stew near the end of cooking is the next step worth trying.
